Sweet Spanish heirloom chilli from Galicia, Padron can be harvested from the green stage when they have the lowest amount of heat. Chillies mature from green to red, horn shaped and get hotter as they mature. Excellent for Spanish Tapas, stir fries, stuffed, grilled or fried whole in olive oil. They are usually harvested young before the heat develops and are pan fried with a pinch of salt and eaten by holding the stalk. Pimientos de Padron from 1,000 to 12,000+ Scoville
