Swiss Chard (Beta vulgaris) 'Bright Lights'

Swiss chard; an excellent value for money vegetable that is both at home in the kitchen garden, vegetable patch or in the flower borders. A good alternative to spinach. Can be harvested once matured (approximately 10-12 weeks after sowing) by cutting the stalks at the base or twisting/snapping them off from the base of the plant, like perpetual spinach it can be harvested from summer to the following spring. A sowing in late spring/early summer will give a crop through to the following spring, in colder climates some form of protection is required i.e. cloche or cold frame. By sowing again in late summer it can be cropped through to the following summer. Once they have gone to seed they form a very decorative plant. The
leaves make an excellent alternative to spinach with the
added advantage of being available all year, and the
stalks can be chopped and added to stir fry dishes. The
leaf stems steamed are classed as a gourmet vegetable.
Flowering stems can be used in place of brocolli. |
